On the iPad, the default view is Text, but even after changing an article’s view to Story, as soon as we step to the next article, we’re returned to Text view again. So, I’m having to hit the “Story” button on every, single article.
It’d be great to have a setting in preferences to change the default view to Story (ideally per folder or feed, but I’d take a global, as well).

It’s the opposite. The “Text” button changes to Text view, where the Story button changes back to the original Story view. Regardless, I won’t allow it as a default for the same reason it’s like that on the web. Although, on the web the setting can be made per-feed (just not global), so I suppose if I could figure out how to allow you to set the Text view per-feed on iOS, I’d be OK with it.
I’m not sure what you mean when you say “It’s the opposite.” I don’t see any discrepancies between what I wrote and what you wrote. My post wasn’t intended to pertain to the labels on the buttons; it pertains to the default view and our having to manually request Story view on each, individual article.
