Point me in the right direction if I missed something, but I would like to be able to filter out Global Shared Stories that has only been shared by 1 person, sort of like a quality filter.

Interesting idea, but I don’t have any filters like that yet. I’ve thought about share thresholds before, specifically # of sharers and # of comments (vs commentless shares).
And if you’re wondering why that isn’t already a feature, it’s simple: features take time to build and I only have so much time. If it isn’t a high enough priority, other stuff will get built before it gets built.
